Here at The Smokehouse, we're devotees of the ancient and delicious art of smoking.  The magical combination of brine and smoke is one of the oldest ways of imparting flavour and preserving precious protein.

 

 

 

Our Smokehouse is designed around a Food Safety Programme based on the principals of HACCP.

 

All The Smokehouse products are locally sourced where possible and our wide range of fish species are all caught in New Zealand waters.  Our signature 'Hot Smoked Salmon' is King Salmon fresh from the Marlborough Sounds and our Greenlipped Mussels are also from the famous Marlborough Sounds.

 

After filleting, we coat the fish in a special brine which is then left overnight.  Ehen the fish to ready for smoking, the smokers are fired up, the manuka shavings scattered and left to smoulder.  Each smoke is personally crafted by our master smokers - it's a unique combination of art and science.

 

When ready, the fragrant smoke imparts a unique and delicious flavour, one that is almost addictive!

 

The smoking process users absolutely no artificial additives and the ingredients are unadulterated.  Our commitment to provide safe and wholesome products is absolute.
